Korean BBQ Wild Hog Ribs Korean BBQ Wild Hog Ribs (Jenny Nguyen-Wheatley photo) These tender wild hog ribs are slathered in a Korean barbecue sauce that is sweet, salty and full of umami.
Ingredients:
1 large side of wild pork ribs 1/2 cup soy sauce 6 tablespoons brown sugar 1/4 cup cooking rice wine (not vinegar) 2 teaspoons Asian toasted sesame oil 1 small onion 1 Asian pear (or bosc pear), cored and peeled 2 tablespoons minced garlic 2 teaspoons grated fresh ginger Cracked black pepper, to taste 4 chopped green onions, plus more for garnish 1/2 cup water Toasted sesame seeds Get the Recipe

Ecuadorean Haunch of Wild Boar Korean BBQ Wild Hog Ribs (Jenny Nguyen-Wheatley photo) This is an adaptation of Hornado de chancho, an Ecuadorean dish. It's prepared with a whole, skinless haunch of wild boar. Along with the potatoes, hornado de chancho is often served with a red onion and tomato salad/salsa and hominy. The meat is also tasty in tacos.
Ingredients:
10-pound bone-in wild pork hind quarter Juice of 2 limes 20 cloves garlic, grated 1 1/2 tablespoons ground cumin 1/2 cup kosher salt 1/4 cup lard 8 cups light beer for marinating, plus 6 cups beer for baking 2 tablespoons of achiote powder (ground annatto seeds) Ground black pepper, to taste 8 Yukon gold potatoes Get the Recipe

Wild Pork Wonton Soup Wild Pork Wonton Soup (Jenny Nguyen-Wheatley photo) A hot bowl of this wild pork wonton soup is a light, yet satisfying and comforting meal.
